We are excited to bring this one back after a four-year absence — it has always been a customer favorite and we roast it dark to develop its full body, bold character, and smooth finish. This is a medium-heavy bodied cup with low acidity, medium-high bitterness, and a dry, lingering finish.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThe cup starts with rich notes of baker's chocolate that serve as a deep, roasty undertone throughout the entire cup. In the middle, dry roasted peanut joins the chocolate, melding naturally and adding a savory, nutty dimension. In the finish, the peanut fades and caramelized sugar emerges alongside the chocolate, adding a bittersweet sweetness that lingers long and dry on the palate. This allows us to explore more of the world of coffee outside of our normal offerings. It is available this month only, while supplies last. \u003c\/span\u003e\u003cstrong\u003e\u003cbr\u003e\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: rgb(31, 33, 36);\"\u003e\u003cstrong\u003eStory: \u003c\/strong\u003eUntil 2005, all the coffee in \u003cspan class=\"markbxd3fpmcs\"\u003eFlores\u003c\/span\u003e was dry-processed, blended and sold to exporters as \u003cspan class=\"markbxd3fpmcs\"\u003eFlores\u003c\/span\u003e DP. The cherries were simply dried on the ground and the farmer would only receive 30 or 40 cents per pound. Without any financial incentive, the quality of this coffee was extremely low. However, in 2005, with $40,000 from the ICCRI (the Indonesian Coffee and Cocoa Research Institute) and spearheaded by a man named Sirup, two farmer groups (Fa Masa and Suka Maju) began processing the coffee using a new, fully-washed method. Two years later, 5 more farmer groups (Ateriji, Papataki, Papawiu, Mezamogo, and Wongawali) decided to undertake \u003cspan class=\"markvj665fn6i\"\u003ewet\u003c\/span\u003e-processing.  All seven groups are now certified \u003cspan class=\"markykl81zgts\"\u003eorganic\u003c\/span\u003e through the Control Union Certification.
