Nicaragua Organic Finca El Pastoral Natural

We are excited to introduce the newest addition to our McLaughlin Reserve line, a sweet and fruit-forward natural processed coffee from the El Pastoral farm in Jinotega, Nicaragua. This special release coffee is juicy and vibrant with a medium-light body. It has a bright citrus acidity, slight tartness, and low bitterness. We hand selected this coffee for its bold fruitiness and we are thrilled with the results! 

The cup starts with the syrupy cherry sweetness of a shirley temple. As you get to the middle of the cup, the flavors get thicker and more complex with juicy notes of passion orange guava juice. There is also a slight ruby red grapefruit bitterness in the middle of the cup that adds a contrasting dimension to the sweet juice flavor. In the finish, sweet notes of strawberry yogurt add a touch of tartness before fading into the long and slightly dry strawberry finish. This is our first release of a true fruit bomb and it does not disappoint!

This fruity Nicaraguan coffee will be available for about a month, so be sure to take advantage of this limited time offering that we expect to be available for most of the holiday season.

Origin information

Juan de Dios Castillo (the family’s agronomist) and his 4 siblings created J&M Family Coffee, a privately-owned export company named after their parents Juan and Miriam (J&M), with the vision of finding the best ways to support coffee producers. Their first goal was to sell their parents’ coffee directly to international buyers. It was a way to honor their parents who started cultivating coffee during their childhood with the income from the first family business as tailors in the town of Jinotega.

With this first goal completed, Juan de Dios Castillo decided to take on a new challenge and start his own farm
called El Pastoral, which has 150 acres of coffee production. Cherries from Finca Pastoral are selected for more specialized processing rather than the more common washed processing.

This Natural processed lot is a stunning example of the skill and commitment Juan de Dios has invested in the family business. During the harvest, the coffee cherries are carefully harvested, and transported to the dry-mill where the weather conditions are more stable for evenly drying coffee inside the cherry. After drying is completed, the coffee is stored and later prepared for export at the same dry-mill. This is a truly integrated model, in which J&M Family Coffee ensures quality control and traceability from farm to export.

There are many different varieties of coffee in the world. It is generally believed that Ethiopia is the birthplace of coffee and that the Typica variety is the origin of countless varieties that exist today.

When coffee trees are transplanted and grown elsewhere, new varieties become established. These alterations can occur naturally by mutation or be cross-bred into hybrid varieties. Hybrids are crafted to utilize the most desirable characteristics of multiple coffee varieties, such as: disease resistance, drought tolerance, crop yield, tree height and most importantly flavor.

Measured in meters above sea level (masl), elevation is a contributing factor to a coffee's flavor profile and production. As elevation increases, you get cooler nights and sunny days which are beneficial for the trees and result in longer growth times. Additionally, at higher elevation, the volcanic soil tends to be more pure and contains a better concentration of minerals that coffee trees love. With slower development and nutrient rich soil, you get greater intensity of flavors in the final product.
