Ethiopia Yirgacheffe Organic Fair Trade (Medium): Ethiopia Yirgacheffe is one of the most celebrated single-origin coffees in the world. This Yirgacheffe is light-bodied with an acidity on the higher end for a medium roast. The acidity pops on your tongue right from the start with notes of lime and white peach. The acidity begins to sweeten in the middle of the cup with notes of guava and melon. The finish has the sweetness of pastry and honey. This is an incredibly complex coffee for a single-origin coffee.
Kenya Peaberry (Light): Our Kenya has a light body with nice citrus acidity at the front of the cup. In the middle of the cup, the acidity begins to balance out with the sweetness of this coffee. Our team noted sweet notes of maple syrup, lemon creme pie, and pastry in the finish.
Kona Blend (Light): Kona Blend is balanced and mild with a medium-light body. Notes of orange highlight the acidity, which is very balanced and sweet. Notes of cinnamon spice enter the middle of the cup and then fade into the finish, which is floral with notes of hibiscus.
Sumatra Organic Fair Trade (Dark): Coffee from Sumatra is typically heavy-bodied, extremely low acid, and very earthy and herbal. This Sumatra Organic Fair Trade typifies the classic profile. The cup is very earthy on the front end, with notes of grass and mint. The sweetness comes out in the second half of the cup, where the chocolate and caramel notes appear and lead into a long, smooth finish.
Timor Organic Fair Trade (Dark): Our Timor Organic Fair Trade boasts the full body that is typical of most Indonesian coffees. It is woody and peppery on the front of the cup. The notes of cedar pop and then quickly fade away as the spicy black pepper notes hit the middle of the cup. The pepper continues into the finish and combines with the sweetness of chocolate malt into a long, lovely finish.
Yemen Mocca (Medium-Dark): Yemen Mocca has an incredible fruity aroma as it brews. This coffee has a balanced acidity and a light body. The cup starts with sweet orange acidity and chocolate. As the acidity fades, the characteristic Yemen winey flavors develop and they linger into the dry finish. This is a unique coffee that will appeal to some, but not certainly not all.
