Our featured coffee for September is a decadent washed coffee from the Finca Isabel farm in Panama. This coffee has a low acidity, bitter chocolate notes throughout, and a coating, full-bodied mouthfeel. The cup is rich from the start, with notes of dark chocolate truffle that start at the beginning of the cup and last into the finish. In the middle of the cup, root beer spice flavors meld wonderfully with the chocolate notes. The finish is rich and chocolatey with a peppery dryness that lingers. As the cup cools, you get a hint of dried fruit sweetness at the front end of the cup that adds a new lighter dimension that balances out the richness of this coffee.

About the coffee of the month: We feature a new coffee every month. This allows us to explore more of the world of coffee outside of our normal offerings. It is available this month only, while supplies last. 

Story: Panama is an origin that constantly makes headlines in the specialty coffee world mostly associated with the renowned Gesha variety. But it would be a mistake to reduce the complexity of this famous growing region to nothing more than plant variety. With this lot from Finca Isabel, there is an opportunity to explore the impact of terroir and generations of coffee knowledge passed into the process. Finca Isabel has 500 acres cultivated with coffee, meticulously divided into plots with distinct varieties planted based on landscape and micro-climates, which influence the maturation and ultimate quality of a coffee seed in different ways. Harvested cherries from Finca Isabel are delivered to Beneficio El Bajareque, which has an experienced team and onsite infrastructure to ensure attention to detail during the post harvest process. This lot is picked with a keen attention to cherry maturation.  The ripe cherries are floated to remove less dense and damaged seeds, and then depulped, fermented, washed and mechanically dried.

Fresh roasted coffee is the best coffee. We never roast weeks ahead. We only roast a coffee when we need it to fulfill an order. You can taste the difference freshness makes in the cup.
